The Lexington Cooperative Market is expanding to North Buffalo.Co-op General Manager, Tim Bartlett said, the new store will be located on Hertel Ave., near Starin Avenue, in the former CVS. Bartlett says the second location will be twice the size as the current Elmwood Avenue store. And he says the co-op expects to add new members, serve more customers, and grow the co-op economy.
"We're really going to replicate this store in the larger footprint. So we're going to have all the same great focus on fresh foods, on produce, on deli. And we're also going to have some great features that our members here have been asking for for years, like an indoor seating area where people can eat in the store."
Bartlett said, Lexington Co-op will be hiring about 60 to 70 employees for the new store. It's expected to open in about a year.
